Vanilla STAXX bread

INGREDIENTS
  • 2 ripe bananas
  • 2 tbsp coconut oil
  • 60g vanilla whey protein
  • 150g greek yoghurt
  • 4 whole eggs
  • 200g brown rice flour
  • 60g coconut sugar
  • 1/3 tsp bicarb
  • Pinch of sea salt
  • 1 1/4 tsp baking powder
  • 30g coconut flour
  • 3 tbsp peanut butter
  • 3 tbsp honey/rice syrup
  • 2 tbsp cacao powder
  • Almond milk if needed
  • 1 STAXX bar

METHOD

  1. Preheat your oven to 180c and grease a bread tin with a little coconut oil.
  2. Add the bananas, coconut oil and coconut sugar into a food processor and cream these together.
  3. Add in the yoghurt and eggs and blend again.
  4. Next, pour in the rice flour, coconut flour, protein powder, baking powder, bicarb and a pinch of salt and blend until smooth. You should be left with a really smooth and creamy cake batter.
  5. Pour this into your loaf tin and pop into the oven to bake for 30-35 minutes.
  6. Once the cake is golden on top and a skewer comes out clean, it should be ready, so transfer to a wire wrack to cool.
  7. For the frosting, combine the peanut butter, cacao and honey and mix until smooth. If you feel that the frosting is too thick, add a little splash of almond milk and mix again.
  8. When the loaf has completely cooled, decorate with the frosting and add chunks of the chopped STAXX.
